SOIL TYPE: careous-clayey ground
WINEMAKING: after crushing the must is left to macerate on the skins for ten
days. The wine obtained through this process is then kept in 225 litres barrels for at
least 12 months. It is inside these barrels that the wine undergoes malolactic fermentation,
which transforms sharp malic acid into softer lactic acid. This fermentation
ennobles the wine and makes it smoother. After a brief period during which the wine
is left to stand, it is bottled and left to age for twelve more months.
ALCOHOL:14,50 % by volume
COLOUR: intense ruby red with garnet red shades, deep and brilliant.
ODOUR: thick and noble smell, characterised by a bouquet of vanilla, liquorice,
tobacco and berries, which tends to evolve continuously.
FLAVOUR: wide-ranging and dry, it comprises highly concentrate fruity tastes as
well as spicy and tannic ones, which are smooth and round.
SERVING TEMPERATURE: 18 - 20° C
PAIRING: very tasty first courses such as pasta with hare sauce, second courses
based on meat in red wine sauce, stew meat, braised meat, stewed game.
