CASTRATED LAMB The term " castrated " will usually indicate the castrated male sheep and meat made from it . Castration is performed on lambs still young to promote more and better assimilation of food and to get an early development of the meat. The mutton is very tender and has a slightly acrid smell . The muscle is characterized by a lit red purple color , while the adipose tissue is very white . Obtained from the leg , mutton chop is seasoned with salt , garlic and rosemary and cooked in the grill . It should be served medium rare . Very popular are also the mutton chops that can be barbecued or fried in plenty of boiling olive oil after being breaded with flour , beaten eggs and breadcrumbs to which you can also mix grated parmesan .
